the eighth of june.

It’s been 41 days since that moment in June when I became
Mrs James Haughery.
It was the happiest, most meaningful day of my life.
And every day since,
my heart has been in a state of pure overwhelmedness.
Overwhelmed to love and be loved by this amazing man.
Overwhelmed to have a committed father to my children.
Overwhelmed to have a home.
Overwhelmed that God would take such brokenness,
and make something so indescribably beautiful.

my friend amy turned me on to the wonderfulness that is succulents from California sold on etsy. i’m planning on these beauties making an appearance at our wedding come june…

very much randomness.

i saw a picture on pinterest recently that listed off a bunch of things women aspire to :
healthy/fit body, clean house, nutritious meals, successful job, etc etc etc.
and the catch line was : “pick two”.
feel like that’s pretty accurate these days.
i’ve been keeping up with work.
and trying to cook more.
but things like cleaning the house, exercising, blogging,
well, they’ve fallen to the wayside.
and i’m ok with that.
it’s good to remember everyone is not physically capable of doing everything all at once.
and the glimpses of online life, are just that –
little bits and pieces of an imperfect whole.

here are few random things on my mind lately…

1  //  my blog reader.

so the bad news is google reader is shutting down on July 1.
which is very sad,
since that’s where I collect and read all my blog feeds.
but the good news is, i heard about feedly via twitter.
and it’s much prettier.
and also very easy to transfer all your subscriptions to.
been playing around with it today.
so far so good…

2  //  baked eggs.


i’ve been a little obsessed with starbucks hot breakfast sandwiches for a while now.
and the other night, i thought : why not recreate this at home?
i googled baked eggs,
and came across this simple recipe.
i’ve modified it a bit in the few times i made these since,
and came up with this :

baked scrambled eggs

6 eggs
3 Tbsp. butter, melted
1/2 tsp. salt
1/2 c. milk

preheat oven to 350.
pour melted butter into an 8×8 baking dish.
in a bowl whisk eggs & salt. add milk.
pour into baking dish.
bake uncovered 10 minutes, stir,
then bake additional 10-15 minutes until eggs are set.
serve immediately.

super easy.

you can slice these eggs up and serve on some crusty rolls
with bacon and gouda for your very own quick/easy imitation starbucks breakfast sandwich.

3  //  granola.

in other news, i have been trying to corral the crazy thing called the grocery budget recently, and realized that one of my biggest money sucks was snacks. so i’ve been cutting back and cooking more, and trying to be more healthy while i’m at it.  this website has been particularly helpful in terms of ideas and recipes. i made her granola and it was a big hit – left out the pumpin seeds and added banana chips. will definitely be making again, and going to try the granola bar version too.

4  //  green grocer.

along the lines of trying to eat more healthy, I’ve been trying to incorporate more fruits and vegetables in our diet, picking back up with my old friend  Washington’s Green Grocer. it has served me immensely, and getting that big box of produce bounty on my doorstep is a highlight of the day. the fresh mango and cara cara oranges in this week’s box were a m a z i n g. thank you green grocer.

5  //  chipotle rice.

And to finish out this food heavy post, I was super happy to discover a copycat recipe for chipotle’s cilantro lime rice. we are fans of pretty much anything chipotle around here. and it was the perfect accompaniment to this.

the seeing God.

slowly working my way through the first books of the Bible…
(and Psalms, Matthew & Acts)…
as i’ve been reading i’ve been struck by one particular theme.
God sees.
again and again I note it…
His intimate involvement in every detail…

So she called the name of the LORD who spoke to her,
“You are a God of seeing,” for she said,
“Truly here I have seen him who looks after me.”
(Genesis 16:13 ESV)

And he said…”I have seen all that Laban is doing to you.”
(Genesis 31:12 ESV)

God saw my affliction and the labor of my hands…
(Genesis 31:42 ESV)

And God heard their groaning, and God remembered his covenant—and God knew.
(Exodus 2:24-25 ESV)

Then the Lord said,“I have surely seen the affliction of my people…I know their sufferings.
(Exodus 3:7 ESV)

The LORD is in his holy temple;
the LORD’s throne is in heaven;
his eyes see…
(Psalm 11:4 ESV)

And it got me thinking…
Do I think of God that way?
As always watching, always involved, always near.
because He is. all the time.
If I feel it or not.
When I’m freaking out about how much I have to do,
or find myself at yet another doctor visit with a sick child,
or wondering where we’ll be living this time next year.
He sees.
He knows.
He is near.
This changes everything.
Let me remember this.
He is not unconcerned.
No. That is impossible.
He has saved me.
He has redeemed me.
He has been oh so faithful.

monday miscellany.

three random things for the start of the week.

ONE ///
it’s almost the end of the month, which means my pantry stock is running low and i’m scrambling for what to make come dinner time. i’d pinned this “lazy sunday casserole”  a while ago, and wednesday night seemed the perfect opportunity to try it out, as i had everything on hand. guys, this was sooo good. whatever the combination of ingredients for the sauce is, it works. yum.


TWO ///
on a purely superficial note. i have finally found a nail polish that looks decent for longer than one day. (and for a mom like me who is clumsy and rough on her hands, that is really saying something.) check out covergirl outlast stay brilliant polish. i picked up my bottle of coral silk at target. loooving it.

my momma posted this quote on her facebook the other day, and it is just the bit of truth i needed to start the week with…

faith is a refusal to panic.

do you like that sort of definition of faith?
does that seems to be too earthly
and not sufficiently spiritual?
it is of the very essence of faith.
faith is a refusal to panic, come what may.
whatever your circumstances at this moment,
bring all you know to be true
of your relationship to God to bear upon it.
then you will know full well that
He will never allow anything
to happen to you that is harmful.
‘All things work together for good to them that love God.’
He loves you with an everlasting love.
i do not suggest that you will be able to understand everything that is happening.
you may not have a full explanation of it;
but you will know for certain that
God is not unconcerned.
that is impossible.
the One who has done the greatest thing of all for you,
must be concerned about you in everything,
and though the clouds are thick
and you cannot see His face,
you know He is there.
